    Steps

    1. Heat the oven to 400°F. Spray a baking sheet (or a wire rack set on it, for crispier bottoms).
    2. In a large bowl, stir together [[chicken]] chicken, [[corn]] corn, [[beans]] black beans, [[spinach]] spinach, [[cheese]] cheese, [[chiles]] green chiles, [[scallions]] green onions, [[cumin]] cumin, [[chili]] chili powder, [[salt]] salt and [[cayenne]] cayenne.
    3. Using [[wrappers]] of egg roll wrappers, roll 2–3 tablespoons of filling into each one. Seal the edge with a wet finger and line them up on the sheet.
    4. Brush the tops with olive oil or spray them.
    5. Bake about 15 minutes, turning halfway so both sides brown.
    6. Meanwhile, mix [[ranch]] ranch, [[avocado]] mashed avocado, [[cilantro]] cilantro and the zest of [[lime]] lime for dipping.
